Yummy Fairy Cakes

Ingredients:
2 cups flour (sifted) 1/2 teaspoon salt 2 teaspoons baking powder 1/2 cup butter 1 cup sugar 2 eggs 1/2 cup milk 1 teaspoon vanilla extract cupcake (fairy cake) liners

Directions:

Line 24 muffin pans with cupcake paper liners.

In a large bowl mix sifted flour, salt and baking powder.

In another bowl cream butter and sugar together until light and fluffy.

Add beaten eggs, vanilla and milk. Mix well.

Fill cupcake liners 3/4 full.

Bake approximately 20 minutes or until baked through.

Let cool completely before icing.

Icing Recipe:
Ingredients:
The measurements below make a very small amount of icing. We've done this because you may want to make lots of small batches of icing using different colors. Use the measurements as a guide and make as much or as little as you need.
2 tablespoons icing sugar 2 teaspoons water 2drops food coloring of choice
Directions:

Place the icing sugar, water and food coloring in a bowl and beat well using a hand-held electric mixer.

When the mixture is smooth and creamy (but not runny) place a small dollop on each fairy cake using a spoon.

Swirl the spoon around to get a round button-type shape.

Let the icing set before serving.
