Yummy Fairy Cakes

Ingredients:

2 cups flour (sifted)
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup butter
1 cup sugar
2 eggs
1/2 cup milk
1 teaspoon vanilla extract
cupcake (fairy cake) liners

Directions:

  • Preheat oven to 375F.

  • Line 24 muffin pans with cupcake paper liners.

  • In a large bowl mix sifted flour, salt and baking powder.

  • In another bowl cream butter and sugar together until light and fluffy.

  • Add beaten eggs, vanilla and milk. Mix well.

  • Fill cupcake liners 3/4 full.

  • Bake approximately 20 minutes or until baked through.

  • Let cool completely before icing.

Icing Recipe:

 

Ingredients:

The measurements below make a very small amount of icing. We've done this because you may want to make lots of small batches of icing using different colors. Use the measurements as a guide and make as much or as little as you need.

2 tablespoons icing sugar
2 teaspoons water
2drops food coloring of choice

Directions:

  • Place the icing sugar, water and food coloring in a bowl and beat well using a hand-held electric mixer.

  • When the mixture is smooth and creamy (but not runny) place a small dollop on each fairy cake using a spoon.

  • Swirl the spoon around to get a round button-type shape.

  • Let the icing set before serving.
