Veggie Puree

Ingredients:

1 medium potato (peeled and chopped)
1 small sweet potato (peeled and chopped)
1 medium carrot (chopped)
1/2 cup fresh or frozen peas

Directions:

  • Place all vegetables in a pan with enough water to cover. Bring to a boil.

  • Reduce heat and simmer for approximately 15 minutes or until veggies are tender.

  • Transfer to blender or food processor and blend until smooth.

  • For variation try adding a little pasta or rice along with vegetables.
