Vegetarian Shepherds Pie Recipe

Ingredients:

1 cup frozen peas
1 cup carrots (diced)
1 onion (finely chopped)
1 cup mushrooms (diced) 1 cup tofu diced 1/4 green pepper (diced)
2 cloves garlic (minced)
1 vegetable stock cube Worcestershire sauce to taste
Salt and pepper to taste
Cheddar cheese 6 cups mashed potatoes

Directions:

  • Boil potatoes until tender.

  • Drain water and mash without adding any additional ingredients and set aside.

  • In a heavy skillet brown onions, green peppers and garlic for about 2 minutes.

  • In a separate bowl combine tofu, vegetable stock cube, Worcestershire sauce, carrots, peas and mushrooms.

  • Add onions, green peppers, garlic and stir well.

  • Place vegetable mixture at bottome of baking pan. Top with mashed potatoes.

  • Make a swirl design on mashed potatoes using fork and sprinkle with salt.

  • This will help the potatoes brown lightly at the top.

  • Sprinkle with cheddar cheese and bake at 350F approximately 30 to 45 minutes or until potatoes are lightly golden brown.
