Vegetarian Shepherds Pie Recipe

Ingredients:
1 cup frozen peas 1 cup carrots (diced) 1 onion (finely chopped) 1 cup mushrooms (diced) 1 cup tofu diced 1/4 green pepper (diced) 2 cloves garlic (minced) 1 vegetable stock cube Worcestershire sauce to taste Salt and pepper to taste Cheddar cheese 6 cups mashed potatoes

Directions:

Boil potatoes until tender.

Drain water and mash without adding any additional ingredients and set aside.

In a heavy skillet brown onions, green peppers and garlic for about 2 minutes.

In a separate bowl combine tofu, vegetable stock cube, Worcestershire sauce, carrots, peas and mushrooms.

Add onions, green peppers, garlic and stir well.

Place vegetable mixture at bottome of baking pan. Top with mashed potatoes.

Make a swirl design on mashed potatoes using fork and sprinkle with salt.

This will help the potatoes brown lightly at the top.

Sprinkle with cheddar cheese and bake at 350F approximately 30 to 45 minutes or until potatoes are lightly golden brown.
