Ultimate Veggie Burger

Ingredients:

1 teaspoon olive oil
1/2 small onion (finely grated)
1 clove crushed garlic (or 1 teaspoon garlic powder)
1 carrot (finely grated)
1/2 small summer squash (finely grated)
1/2 small zucchini (finely grated)
3/4 cup rolled oats
2 tablespoons shredded cheddar cheese
1 egg (beaten)
1 1/2 teaspoon soy sauce
3/4 cup all-purpose flour

Directions:

  • Heat the olive oil in frying pan over low heat.

  • Add onion and garlic and cook for 3 to 5 minutes or until tender.

  • Mix in the carrots, squash, and zucchini. Continue to cook and stir for 2 minutes.

  • Remove pan from heat and add oats, cheese, egg and soy sauce.

  • Transfer mixture to bowl and refrigerate 1 hour (or until mixture is firm).

  • Shape veggie mixture into four patties.

  • Place flour on a large plate and drop each patty into the flour, lightly coating both sides.

  • Shallow fry, grill or barbecue for 5 minutes on each side or until heated through and browned.

Extra Tip:

 

If mixture is a little sticky try adding a little flour to the veggie mixture.
