Summer Couscous Salad

Ingredients:
1 cup uncooked couscous 1 cup cherry tomatoes (halved) 1/2 cup cumber (diced) 1 tablespoon fresh lemon juice 1 tablespoon olive oil Salt and pepper to taste 1 tablespoon fresh parsley (optional)

Directions:

Cook couscous according to package instructions.

Once cool add all ingredients and toss together well.

Sprinkle with parsley (if using) and serve.
