Strawberry Jello Cake

Ingredients:
* For a lighter cake, omit the icing and simply garnish the cake with sliced fresh strawberries. You can also use a little bit of whipped topping topped with strawberries.
1 package white cake mix 2/3 cup vegetable oil 1 package strawberry gelatin powder (4-serving size) 4 eggs (beaten) 1/4 cup milk 1 cup mashed strawberries (fresh or frozen) 1/2 cup butter or margarine 1 cup confectioners’ sugar 1/4 cup additional mashed strawberries.

Directions:

Combine cake mix and gelatine powder in a large bowl.

Add oil, eggs, milk and 1 cup mashed strawberries.

Pour into two 9-inch round greased cake pans.

Bake at 350F for 30 minutes or until a toothpick or small knife inserted in center comes out clean.

Cool completely and frost with strawberry icing (see recipe below).
Strawberry Icing - Mix butter and confectioners' sugar together until smooth. Add ¼ cup mashed strawberries. Spread between cake layers and frost top and sides of cake.
