Spanish Picnic Tortilla

Ingredients:

6 eggs (beaten lightly)
1 medium potato (sliced thinly)
1 small onion (chopped finely)
2 tablespoons olive oil

Directions:

  • Heat olive oil in non stick pan and cook potatoes and onion for about 5 minutes or until tender (stirring often).

  • Pour egg mixture over potatoes and onions cook, tilting pan, over low to medium heat until eggs are almost set.

  • Place pan under preheated grill until top is lightly browned and eggs are set.

  • Cut into triangles and serve cold.
