Spanish Picnic Tortilla

Ingredients:
6 eggs (beaten lightly) 1 medium potato (sliced thinly) 1 small onion (chopped finely) 2 tablespoons olive oil

Directions:

Heat olive oil in non stick pan and cook potatoes and onion for about 5 minutes or until tender (stirring often).

Pour egg mixture over potatoes and onions cook, tilting pan, over low to medium heat until eggs are almost set.

Place pan under preheated grill until top is lightly browned and eggs are set.

Cut into triangles and serve cold.
