Moist Apple Cake

Ingredients:
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
1/4 teaspoon nutmeg
2 cups brown sugar
2 eggs (beaten)
1/2 cup vegetable oil
1 teaspoon vanilla
4 cups peeled and diced apples
1 cup chopped walnuts

Directions:

In a large bowl combine flour, baking soda, salt, cinnamon, nutmeg and brown sugar.

In a separate bowl, combine beaten eggs, oil and vanilla. Mix well.

Add egg mixture to flour mixture and mix well.

Fold in apples and walnuts.

Transfer batter to lightly greased baking pan.

Bake in preheated oven at 350F for approximately 45 minutes or until golden and baked through.

Let cool in pan for 5 minutes before removing to wire rack to cool completely.
