Moist Apple Cake

------------------------------------------------------------

Ingredients:

2 cups flour

1 teaspoon baking soda

1/2 teaspoon salt

2 teaspoons cinnamon

1/4 teaspoon nutmeg

2 cups brown sugar

2 eggs (beaten)

1/2 cup vegetable oil

1 teaspoon vanilla

4 cups peeled and diced apples

1 cup chopped walnuts

Directions:

  • In a large bowl combine flour, baking soda, salt, cinnamon, nutmeg and brown sugar. 

  • In a separate bowl, combine beaten eggs, oil and vanilla.  Mix well. 

  • Add egg mixture to flour mixture and mix well.  

  • Fold in apples and walnuts. 

  • Transfer batter to lightly greased baking pan. 

  • Bake in preheated oven at 350F for approximately 45 minutes or until golden and baked through. 

  • Let cool in pan for 5 minutes before removing to wire rack to cool completely.
