Mexican Meat Loaf Recipe

Ingredients:

2 pounds lean ground beef
2 large eggs (beaten)
3/4 cup breadcrumbs
1/2 cup milk
1 cup mild Mexican salsa
1/2 cup grated cheddar cheese

 

For the Topping


1/2 cup mild Mexican salsa
1/2 cup sour cream
1/4 cup grated cheddar cheese
Spring onions to garnish

Directions:

  • In a large bowl combine all meat loaf ingredients (not topping ingredients) and mix well.

  • Place meat loaf mixture into a meat loaf baking pan or shape into a loaf shape and place on regular baking pan.

  • In a separate bowl combine all topping ingredients and mix well. Set aside.

  • Bake meat loaf at 350F approximately 30 minutes.

  • Carefully spoon all topping ingredients over meat loaf and bake an additional 15 to 25 minutes or until meat loaf is browned and cooked through.

Extra Tip:

For an easy breadcrumb mixture, simply take two pieces of bread and pop in the toaster. Once toasted, either grate the bread or crumble into small pieces.

In a pinch you can also use dry plain oatmeal or crumbled crackers in place of breadcrumbs.
