Mexican Meat Loaf Recipe

Ingredients:
2 pounds lean ground beef 2 large eggs (beaten) 3/4 cup breadcrumbs 1/2 cup milk 1 cup mild Mexican salsa 1/2 cup grated cheddar cheese
For the Topping
1/2 cup mild Mexican salsa 1/2 cup sour cream 1/4 cup grated cheddar cheese Spring onions to garnish

Directions:

In a large bowl combine all meat loaf ingredients (not topping ingredients) and mix well.

Place meat loaf mixture into a meat loaf baking pan or shape into a loaf shape and place on regular baking pan.

In a separate bowl combine all topping ingredients and mix well. Set aside.

Bake meat loaf at 350F approximately 30 minutes.

Carefully spoon all topping ingredients over meat loaf and bake an additional 15 to 25 minutes or until meat loaf is browned and cooked through.

Extra Tip:
For an easy breadcrumb mixture, simply take two pieces of bread and pop in the toaster. Once toasted, either grate the bread or crumble into small pieces.
In a pinch you can also use dry plain oatmeal or crumbled crackers in place of breadcrumbs.
