Mediterranean Chicken Skewers

Ingredients:
4 boneless/skinless chicken breasts 1/4 cup soy sauce 4 tablespoons fresh lime juice 4 tablespoons olive oil 1 tablespoon chopped fresh basil 1 teaspoon garlic powder Cherry tomatoes (whole) Small button mushrooms(whole) Zucchini (diced)

Directions:

Cut chicken breasts into small chunks.

Combine chicken and marinade ingredients in large bowl and mix well.

Cover and refrigerate overnight (this will help chicken absorb flavor).

Thread chicken onto lightly oiled skewer alternating with vegetables.

Repeat with remaining chicken and vegetables.

Place chicken skewers onto prepared barbecue grill and cook, turning frequently, for 8 minutes or until cooked through.

Serve with a couscous salad and focaccia or French bread.
