Mediterranean Chicken Skewers

------------------------------------------------------------

Ingredients:

4 boneless/skinless chicken breasts
1/4 cup soy sauce
4 tablespoons fresh lime juice
4 tablespoons olive oil
1 tablespoon chopped fresh basil
1 teaspoon garlic powder
Cherry tomatoes (whole)
Small button mushrooms(whole)
Zucchini (diced)

Directions:

  • Cut chicken breasts into small chunks.

  • Combine chicken and marinade ingredients in large bowl and mix well.

  • Cover and refrigerate overnight (this will help chicken absorb flavor).

  • Thread chicken onto lightly oiled skewer alternating with vegetables.

  • Repeat with remaining chicken and vegetables.

  • Place chicken skewers onto prepared barbecue grill and cook, turning frequently, for 8 minutes or until cooked through.

  • Serve with a couscous salad and focaccia or French bread.
