Ingredients:
3 large eggs 1 2/3 cups milk 2 cups all-purpose flour 4 teaspoons baking powder 1 tablespoon sugar 1 teaspoon salt ¼ cup melted butter or margarine
Directions:
Beat the eggs well in a large bowl using an electric mixer. Add the milk. Combine all the dry ingredients in a separate bowl and add to the milk/egg mixture. Mix until just blended and add the melted butter, mix again. Heat the waffle iron. It will be ready once you a drop of water evaporates on it. Spoon the batter into the waffle iron compartments. Cover and cook until ready (your waffle iron may have a setting to let you know it’s finished) or watch for when it stops steaming. Remove waffle and keep covered until you finish cooking remaining waffles.
Buttermilk Waffle Recipe
Ingredients:
2 cups flour 1 teaspoon salt 1/2 teaspoon baking soda 2 eggs (separated) 1 3/4 cups buttermilk (or milk) 4 tablespoons melted butter
Directions:
Mix dry ingredients (flour, salt, baking soda) in a bowl and set aside. In a separate bowl, beat egg whites until they just start to hold a peak (do not beat until stiff). Whisk egg yolks with milk or buttermilk and melted butter. Gradually add the egg yolk mixture to the dry ingredients mixing gently (do not beat). The batter should still have some small lumps of flour which will disappear as the waffles bake. Gently fold in beaten egg whites. Batter will be thick. Gently pour mixture into each compartment of preheated waffle maker. Cook until crispy and brown. Serve with Syrup, jam or favorite fruit toppings.
Banana Waffle Recipe
Ingredients:
2 cups sifted flour 3 teaspoons baking powder 1/2 teaspoon salt 1 tablespoon sugar 3 eggs (separated) 1 1/2 cups milk 5 tablespoons melted butter 1 banana, thinly sliced
Directions:
Mix and sift dry ingredients (flour, baking powder, salt and sugar). Combine beaten egg yolks, milk and melted butter. Add the egg mixture to dry ingredients, beat until smooth. Stir in sliced banana. Fold in stiffly beaten egg whites. Pour batter into each section of preheated waffle iron. Cook until crispy and browned. Serve with maple syrup or jam.
