Easy Bread Pudding
Ingredients:
4 slices white bread (crusts removed) 2 1/2 cups milk 4 eggs 2 tablespoons caster sugar 1/2 teaspoon vanilla Pinch ground nutmeg Butter
Directions:
Spread bread with butter and cut into small triangle shaped pieces. Place bread slices in lightly buttered baking dish. Whisk milk, eggs, sugar and vanilla in large bowl. Pour mixture over bread & Sprinkle with nutmeg. Pour boiling into the baking dish until halfway up sides. Bake uncovered at 350 degrees about 20 minutes or until pudding starts to thicken.
Quick & Easy Rice Pudding
Ingredients:
1/2 cup cooked rice 1 cup milk 4 teaspoons brown sugar 1/2 teaspoon cinnamon (optional) 1/4 cup raisins (optional)
Directions:
Combine milk and sugar in medium pan and bring to a boil. Stir in cooked rice. Stir in cinnamon (if using). Cook, stirring regularly for about 5 minutes or until pudding starts to thicken. Serve topped with raisins (if desired or fruit.
Kid Favorite Banana Pudding
Ingredients:
2 eggs (separated) 2/3 cup sugar 1 tablespoon cornstarch 2 cups milk 2 bananas (sliced) 1 teaspoon vanilla 1/4 cup sugar
Directions:
Beat egg yolks. Add 2/3 cup sugar and cornstarch to egg yolks. Mix thoroughly. Add milk and cook over low heat in heavy saucepan until creamy, stirring constantly. Remove from heat and add vanilla extract. In a lightly buttered baking dish, place alternating layers of graham crackers and sliced bananas. Pour custard mixture over bananas and graham crackers and set aside. In a seperate bowl, beat egg whites until stiff; add 1/4 cup of sugar. Spread egg whites over the custard and bake at 350° for about 10 minutes, until nicely browned.
Easy Vanilla Pudding
Ingredients:
3 Cups Milk 1/4 cup cornstarch 1/2 cup sugar 1/4 teaspoon salt 1 teaspoon vanilla extract
Directions:
Heat 2 2/3 cups of the milk. Mix cornstarch, sugar and salt in seperate bowl. Stir in remaining milk to cornstarch mixture. Add to heated milk and cook over low heat, continuously stirring, until thick and smooth and cornstarch is thoroughly cooked (about 10 minutes).
