NEW Banana Oatmeal Cookies
Ingredients:
1 cup all-purpose flour 1 cup packed brown sugar 3/4 cup butter 1 teaspoon salt 1/2 teaspoon baking soda 1 teaspoon cinnamon 1 teaspoon vanilla 3 cups rolled oats 1/2 cup chopped walnuts (optional) 1 egg 1/2 cup mashed banana (ripe)
Directions:
Preheat oven to 350 degrees F. Combine flour, baking soda, salt and cinnamon in a bowl and set aside. In a large bowl, mix butter and brown sugar. Mix in egg, mashed banana and vanilla. Add flour mixture to butter mixture and mix well. Stir in rolled oats and walnuts (is using). Drop by teaspoonfuls onto a non-stick cookie sheets. Leave about 2 inches between cookies for spreading. Bake for 8 to 10 minutes or until golden brown. Cool for 5 minutes before transferring to wire racks to cool completely.
Easy Oatmeal Cookies
Ingredients:
1 cup flour 1/2 teaspoon salt 2 teaspoons baking powder 3 eggs 1 cup butter 1 cup raisins 3 1/2 cups quick cooking oatmeal 1 cup sugar
Directions:
Preheat oven to 350F. Pour boiling water over raisins ( just enough water to cover the raisins), let sit. Combine all other ingredients in large bowl. Fold in raisin mixture. Drop by teaspoonful onto cookie sheet. Bake 12 to 15 minutes, until golden brown. Cool for 5 minutes before removing to wire rack to cool completely.
Grandma's Oatmeal Cookie Recipe
Ingredients:
1 1/2 c all-purpose flour 1/2 cup granulated sugar 1 cup packed brown sugar 1 teaspoon baking soda 1 teaspoon salt 1/2 teaspoon nutmeg 1 1/2 teaspoon cinnamon 3/4 cups shortening 1/4 cups milk 2 eggs 3 cups oats (uncooked, quick or old fashioned) 1 cup raisins
Directions:
Sift together flour, baking soda, salt, nutmeg and cinnamon in large bowl. Add shortening, brown sugar, white sugar, eggs and milk. Beat until smooth. Stir in oats and raisins. Chill dough for about 1 hour. Roll out on lightly floured surface to 1/4-inch thickness. Cut with floured round cookie cutter. Place onto cookie sheets and sprinkle lightly with sugar. Bake at 350F for 12 to 15 minutes or until golden brown. Cool for 5 minutes before removing to wire rack to cool completely.
Oatmeal Applesauce Cookies
Ingredients:
1 1/4 cups all-purpose flour 1 1/4 cups rolled oats 1/4 teaspoon baking soda 1/2 teaspoon ground cinnamon 2/3 cup packed brown sugar 1/3 cups butter (softened) 1 egg (lightly beaten) 1/2 cup applesauce
Directions:
Preheat oven to 350F. Mix butter and brown sugar in large bowl until creamy. Add cinnamon and baking soda. Stir until combined. Mix in applesauce and beaten egg. Add flour, a little at a time, stirring after each addition. Stir in oats. Drop by teaspoonful onto cookie sheet. Bake for 12 to 15 minutes or until golden brown. Cool for 5 minutes before removing to wire rack to cool completely.

Ingredients:
2 cups flour 1 teaspoon salt 1/2 teaspoon baking soda 2 teaspoons baking powder 1 1/3 cup packed brown sugar 3/4 cup white sugar 3 cups rolled oats 1 1/2 cups raisins 2 eggs 1 teaspoon vanilla 1 cup butter
Directions:
Cover raisins with warm water and soak for 10 minutes. Drain thoroughly and set aside. Combine eggs, 2 tablespoons water, vanilla, butter and sugars in large bowl. Mix well. Sift flour, salt, baking soda and baking powder in another bowl. Add flour mixture to egg mixture and beat until smooth. Add oats and raisins and mix until blended. Form into 2-inch-thick logs. Wrap in waxed paper and chill until firm. Slice rolls into 1/2-inch thick slices and place onto cookie sheets. Flatten with fork in criss-cross pattern. Bake at 350F for 10 to 12 minutes or until golden brown.
Chocolate Oatmeal Cookies
Ingredients:
1 1/4 cups all-purpose flour 1 cup packed brown sugar 1/2 cup white sugar 1/2 teaspoon baking soda 1 teaspoon salt 3 cups quick cooking oats 1 cup butter (softened) 2 eggs 2 teaspoons vanilla 1 cup semisweet chocolate chips 1 cup chopped pecans (optional)
Directions:
Preheat oven to 325F. Mix together butter, brown sugar, and white sugar in large bowl until smooth. Beat in eggs one at a time, then stir in vanilla. Combine the flour, baking soda, and salt in another bowl. Stir flour mixture into butter and sugar mixture and just lightly blend. Mix in the quick oats, pecans (if using) and chocolate chips. Drop by teaspoonfuls onto cookie sheet. Bake for 12 to 15 minutes in preheated oven. Cool cookies for 5 minutes before transferring to wire rack to cool completely.
