Kid Muffin Recipes
Muffins and mini muffins are great snacks for kids. When making muffins, I usually double the batch and make extra muffins for freezing. These keep really well and can be warmed up in the microwave in seconds.
Tip: Place mini muffins in individual freezer bags (2 muffins per bag). On busy days you can just grab a bag or two on your way out. You’ll have an instant delicious, healthy snack. Great for lunchboxes too.
NEW Oatmeal Muffin Recipe
Ingredients:
3/4 cup flour 2 tablespoons brown sugar 1 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 3/4 cup uncooked oatmeal (traditional slow cooking oats) 1 teaspoon cinnamon 1/4 cup butter or margarine 3/4 cup buttermilk 1 egg
Directions:
Preheat oven to 400F. Grease a 12-hole muffin tin well and set aside. Combine the flour, baking powder, baking soda, salt, sugar, cinnamon and oatmeal in a large bowl. Mix together well. In a separate bowl mix together the butter, buttermilk and egg. Mix well. Gently fold into the dry ingredients. Take care not to over mix. Pour batter into 12 muffin cup tin and bake for approximately 15 to 20 minutes or until baked through. Best served warm with a little butter and jam.
Fruit Muffin Recipe
Ingredients:
2 cups self-raising flour 1 teaspoon cinnamon 1/2 cup firmly packed brown sugar 1/2 cup raisins 1 cup milk 1/2 cup butter (melted) 1 egg (beaten lightly)
Directions:
Lightly grease one 12-hole muffin tin. Combine flour, cinnamon, sugar and raisins in large bowl. Stir in milk, butter and egg. Do not over mix. Spoon mixture into pan holes. Bake at 350 degrees for about 15 minutes or until browned.
For mini muffins use two 12 hole mini muffin tins. Makes 36 mini muffins, 12 regular muffins
Banana Muffin Recipe
Ingredients:
2 cups self-raising flour 1/2 cup firmly packed brown sugar 1 ripe banana (mashed) 1 cup milk 1/2 cup butter (melted) 1 egg (beaten lightly)
Directions:
Lightly grease one 12-hole muffin tin. Combine flour and sugar in large bowl. Stir in milk, butter and egg. Add mashed banana. Do not over mix. Spoon mixture into pan holes. Bake at 350 degrees for about 15 minutes or until browned.
For mini muffins use two 12 hole mini muffin tins. Makes 36 mini muffins, 12 regular muffins
Apple Muffin Recipe
Ingredients:
2 1/2 cups all-purpose flour 1 tablespoon baking powder 1 teaspoon salt 1/2 teaspoon cinnamon 1 cup grated apple 2/3 packed brown sugar 2 eggs, lightly beaten 2/3 cup milk 1/4 cup melted butter
Directions:
Lightly grease one 12-hole muffin tin. Combine flour, baking powder, salt and cinnamon in large bowl. Gently fold in grated apple and brown sugar. In another bowl, combine eggs, milk and butter. Add to flour mixture. Do not over mix. Spoon mixture into pan holes. Bake at 375 degrees for 15 to 20 minutes.
For mini muffins use two 12 hole mini muffin tins. Makes 36 mini muffins, 12 regular muffins
Chocolate Chip Muffin Recipe
Ingredients:
1 cup semi-sweet chocolate chips 1 3/4 cups all-purpose flour 1/3 cup sugar 2 teaspoons baking powder 1/4 teaspoon salt 1 egg (lightly beaten) 3/4 cup milk 1/4 cup vegetable oil 1/2 teaspoon vanilla
Directions:
Lightly grease one 12-hole muffin tin. Combine flour, baking powder, sugar, and salt. In another bowl mix egg, milk, vegetable oil and vanilla. Add to flour mixture. Do not over mix. Fold in chocolate chips. Bake at 375 degrees for 15 to 20 minutes.
For mini muffins use two 12 hole mini muffin tins. Makes 36 mini muffins, 12 regular muffins
