Easy Kid Butter Cookie Recipes

NEW  Cinnamon Butter Cookie Recipe

 

Ingredients:

 

1 cup butter (or you can substitute ½ cup butter, ½ cup margarine)
1 cup sugar
3 eggs, beaten
2 teaspoons cinnamon
1/2 teaspoon nutmeg
3 1/2 cups unbleached all-purpose flour
1 teaspoon vanilla extract

Directions:

 

In a large bowl beat the butter and sugar together.  When light and fluffy add the beaten eggs and beat until well blended.  Stir in 1 teaspoon of the cinnamon, all the nutmeg, flour and vanilla extract. Stir until mixed through.  Shape into a log shape and wrap with cling film.  Place in refrigerator for approximately 4 hours until chilled.

 

NEW  Lemon Butter Cookie Recipe

 

Ingredients:

 

3 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
1 1/2 cups sugar
3/4 cup butter (room temperature)
1 large egg
1/4 cup fresh lemon juice
2 tablespoons finely grated lemon peel (optional)

Directions:

 

Mix together flour, salt and baking soda in bowl and set aside. In a large bowl, mix together butter and sugar until creamy. Beat in egg, lemon just and lemon peel. Gradually blend in flour mixture. Roll the dough into 2, 9-inch log shapes. Wrap in cling wrap and refrigerate until firm (about one hour). Cut dough into ¼-inch thick slices. Sprinkle slices with sugar (optional) and place on lightly greased cookie sheets. Bake at 350F for about 10 to 12 minutes or until golden around edges. Cool for 5 minutes before removing to wire rack to cool completely.

  

Easy Butter Cookie Recipe

 

Ingredients:

 

2 cups all-purpose flour
1 cup unsalted butter
3/4 cup granulated sugar
1/4 teaspoon salt
1 1/2 teaspoons vanilla
1 large egg yolk

Directions:

 

Mix butter, sugar, salt and vanilla in large bowl until smooth and creamy. Mix in the egg yolk until well blended, scraping down the sides of the bowl at least once. Add the flour and mix lightly. Place dough on lightly floured surface and knead a few times. Just until dough looks smooth. Place dough on cling wrap and roll into a log shape. Refrigerate for 2 hours. Slice the dough into slices about 1/8" thick and place them on cookie sheets about one inch apart. This dough is also great for cutting into fun shapes with cookie cutters. Bake at 325F for about 15 minutes or just until lightly golden around edges. Cool for 5 minutes before transferring to wire rack to cool completely.  

 

Old Fashion Butter Cookies

 

Ingredients:

 

2 1/2 cups flour
1 cup unsalted butter (room temperature)
1 cup powdered sugar
1 egg
1 1/2 teaspoons vanilla
1/2 teaspoon salt

Directions:

 

Combine butter, sugar, egg and vanilla in a large bowl and mix with mixer on medium speed until smooth and fluffy (about 3 to 4 minutes).  Stir together flour and salt in another bowl.  Add flour mixture to butter mixture and beat on low speed until combined. Place dough on cling wrap and roll into a log shape. Refrigerate for about 1 hour. Slice cookies 1/8" thick; place on cookie sheets. Bake at 325F for about 15 minutes or just until golden brown around edges. Cool for 5 minutes before transferring to wire rack to cool completely.

 

Almond Drop Butter Cookie Recipe

 

Ingredients:

 

2 cups all-purpose flour
1 cup butter (softened)
1 cup sugar
1 egg
1/2 teaspoon vanilla extract
1 tablespoon almond extract

Directions:

 

Preheat oven to 350F. Mix butter and sugar until creamy in large bowl. Add egg, vanilla, and almond extract, and mix well. Mix in flour. Drop by rounded teaspoonfuls onto cookie sheets and bake 10-12 minutes or until golden brown around edges. Cool for 5 minutes before transferring to wire rack to cool completely.

 

Swedish Butter Cookies

 

Ingredients:

 

2 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons maple syrup
1 cup sugar
1 cup butter
2 tablespoons confectioners sugar (for sprinkling)

Directions:

 

Mix butter and sugar in large bowl until creamy. Add maple syrup and mix well. Combine the flour and baking soda in another bowl. Gradually add the flour mixture to butter mixture. Divide the dough into eight portions. Roll each portion into a 9-inch log. Place 3 inches apart on cookie sheets. Bake at 300F for 20 to 25 minutes or until lightly golden brown. Cut into 1-inch slices. Cool for 5 minutes before transferring to wire rack to cool completely. Dust with confectioners sugar.

 

Large Butter Cookie Recipe

 

Ingredients:

 

Large recipe which makes approximately 18 dozen cookies (great for holiday cookie projects). Reduce all measurements by half for smaller batch.

6 cups flour
2 cups sugar
2 teaspoons baking powder
2 cups butter (softened)
3 eggs
1 teaspoon vanilla

Directions:

 

Mix together the butter and sugar until smooth and creamy. Then add eggs and vanilla. Mix well. Combine the flour and baking powder in large bowl. Gradually add egg mixture to flour mixture and mix well. Place dough on lightly floured surface and cut into shapes using cookie cutters. Sprinkle with sugar (optional). Place cookies on cookie sheet and bake at 350F for 10 to 12 minutes or until golden on edges.
