Savory Breakfast Muffin Recipe
Ingredients:
2 cups all purpose flour
1/2 cup of finely chopped cooked lean bacon or ham
1/2 coarsely grated cheddar cheese
1 tablespoon finely chopped chives
1/2 cup butter (melted)
1 cup milk
1 egg, beaten lightly
Directions:
Lightly grease a muffin pan. Combine flour, bacon or ham, cheese and chives in a large bowl. Stir in butter, milk and egg (make sure not to over mix). Pour mixture into pan holes. Bake in moderately hot oven 15 minutes. Cool before serving.
Banana Bran Muffins
Ingredients:
1 1/2 cups flour
1 cup bran
2 ripe bananas (mashed)
2/3 cup milk
1/4 cup brown sugar
1/4 cup vegetable oil
1 egg
1 tablespoon baking powder
1/2 teaspoon salt
Directions:
In a large bowl combine mashed bananas, bran, and milk. Stir well. Add brown sugar, oil and egg and mix well. Gently stir in flour, baking powder, and salt into bran mixture until just combined (don’t over mix). Spoon into lightly greased muffin tins filling until half full. Bake at 375 degrees for 25 minutes.
Banana Muffin Recipe
Ingredients:
2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 ripe bananas (mashed)
1/2 cup milk
1/3 cup oil
1 egg, slightly beaten
Directions:
Preheat oven to 375 degrees. Grease muffin pan. In a large bowl combine dry ingredients (flour, sugar, baking powder, baking soda, salt). Stir in milk, oil and egg until moistened. Gently fold in mashed banana taking care not to over mix batter. Spoon batter into muffin cups. Bake for 15 to 20 minutes. Immediately remove from pan. Serve warm or cool.
Blueberry Muffin Recipe
Ingredients:
1 1/2 cups all-purpose flour
3/4 cup sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1 cup fresh blueberries (or frozen)
Directions:
Preheat oven to 400 degrees F. Grease muffin cups or line with muffin liners. Combine flour, sugar, salt and baking powder in a large bowl. Combine vegetable oil, eggs and milk in a small bowl and mix well. Gently combine the egg mixture with the dry ingredients taking care not to over mix. Fold in blueberries. Fill muffin cups. Bake for 20 to 25 minutes in the preheated oven.
Easy Muffin Variations
Several easy muffin variations the whole family will enjoy.
Apple/Cinnamon Muffins - Omit the blueberries for 1 finely chopped apple and add 1 teaspoon of cinnamon.
Strawberry/Banana Muffins - Omit the blueberries and add 1 ripe banana (mashed) and 1/2 cup strawberries (chopped).
Blueberry/Banana Muffins - Add 1 ripe banana (mashed).
Raspberry/Banana Muffins - Omit the blueberries and add 1/2 cup of raspberries (chopped) and 1 ripe banana (mashed)
Cooking Tip: When making any muffin recipe, the trick is not to over mix. Try to gently combine all ingredients while mixing as little as possible.
Another good tip is if you have overripe bananas and don't want to bake with them right away, freeze them whole (in their peels), wrapped airtight. You'll have ripe bananas when you're ready to bake.
