Honey Crunch Bars
Ingredients:
1/2 cup firmly packed brown sugar 1/3 cup vegetable oil 1/4 cup pure honey 1 1/4 cup of muesli or rolled oats 2 tablespoon bran cereal 1/4 cup dried fruit of choice (raisins, apricots, mixed fruit, etc.)
Makes 12 bars
Directions:
Preheat oven to 375 degrees F. Grease a 9 inch by 13 inch pan, or two 8 inch by 8 inch pans. Put sugar, oil and honey into a large bowl and microwave on medium for 2 minutes. Stir in muesli, bran cereal and fruit. Mixture should be moist enough to form a ball, without extra liquid. Put mixture in prepared pan and spread evenly. Bake for 30 minutes. Remove from oven and cut into bars while still hot. Wait until bars cool before removing from pan.
Jammy Breakfast Bars
Ingredients:
1/2 cups flour 1 teaspoon baking powder 1 cup brown sugar 1 1/2 cups rolled oats 3/4 cups butter 1 1/2 cups strawberry or apricot jam
Makes approximately 12 bars
Directions:
Preheat oven to 325 degrees. Mix together flour, baking powder, brown sugar and oats in a large bowl. Mix in melted butter. Press 2/3 of mixture into a greased 13 x 9 baking pan. Spread the strawberry or apricot jam evenly on top. Sprinkle the remaining crumb mixture over the jam. Bake for about 45 minutes, or until brown on top. Cool before cutting into bars.
