Egg & Bacon Pockets

Ingredients:

2 eggs
2 slices of lean bacon
2 pita breads

----------------------------------------------------------------------

Directions:

  • Lightly toast each pita bread and cut in half.

  • Cut bacon strips into small pieces and place in preheated frying pan.

  • Cook for about 2 minutes (or use microwave).

  • Remove from heat and set aside.

  • Scramble eggs in a lightly buttered frying pan.

  • When eggs are done add bacon and stir together.

  • Fill each toasted pita pocket with egg and bacon mixture.
