Easy Fish Cake Recipe

Ingredients:

1 pound cod fish fillets
1 small onion (finely chopped)
1 tablespoon fresh chopped parsley
2 cups mashed potatoes
2 eggs (beaten)
3 tablespoons butter
3/4 cup bread crumbs
Salt and pepper to taste
4 tablespoons olive oil

Directions:

  • Boil, drain and mash potatoes without adding any additional ingredients. Set aside.

  • In a large bowl mix cooled potatoes, onion, parsley, eggs and butter. Mix well.

  • Steam cod for a few minutes and flake apart into small pieces, making sure to remove all bones.

  • Add cod pieces to potato mixture and mix well.

  • Shape mixture into patties.

  • Coat with bread crumbs.

  • Heat the olive oil in a heavy skillet.

  • Fry each patty approximately 5 minutes on each side until golden brown and cooked through.

  • Avoid turning patties often so fish cakes don't break apart.
