Easy Fish Cake Recipe

Ingredients:
1 pound cod fish fillets 1 small onion (finely chopped) 1 tablespoon fresh chopped parsley 2 cups mashed potatoes 2 eggs (beaten) 3 tablespoons butter 3/4 cup bread crumbs Salt and pepper to taste 4 tablespoons olive oil

Directions:

Boil, drain and mash potatoes without adding any additional ingredients. Set aside.

In a large bowl mix cooled potatoes, onion, parsley, eggs and butter. Mix well.

Steam cod for a few minutes and flake apart into small pieces, making sure to remove all bones.

Add cod pieces to potato mixture and mix well.

Shape mixture into patties.

Heat the olive oil in a heavy skillet.

Fry each patty approximately 5 minutes on each side until golden brown and cooked through.

Avoid turning patties often so fish cakes don't break apart.
