Easy Casserole Recipes

Easy Casserole recipes the kids will love.  Casseroles are a definite family staple. They're not only nutritious but also easy to make... great for busy parents! These homemade casserole recipes are very kid friendly and super easy to make.

Tuna Rice Casserole Recipe

 

 

Ingredients:

 

1 can condensed cream of mushroom soup
1 1/2 cups milk
1 cup frozen peas
2 cups cooked white rice
2 cans tuna (drained and flaked)
1 cup grated cheddar cheese
Salt and pepper to taste

 

Directions:

 

Cook rice according to instructions and set aside. Place soup, milk, and peas in a saucepan. Cook over medium heat approximately 4 minutes, stirring regularly until mixture begins to thicken. Add tuna and rice to soup mixture and mix well. Pour tuna/rice mixture into lightly greased baking pan and season with salt and pepper to taste. Sprinkle with cheese. Bake at 350F approximately 20 minutes or until cheese is bubbly and golden.

 

Bacon & Corn Casserole Recipe

 

Ingredients:

 

2 cups frozen or canned corn kernels
6 slices bacon (cut in halves)
2 cups breadcrumbs
1 (15 ounce) can diced tomatoes
1 teaspoon sugar
Salt and pepper to taste

Directions:

 

Arrange half the bacon at the bottom of baking casserole dish.  Top with 1 cup bread crumbs. Mix tomatoes in corn in separate bowl and add sugar and salt and pepper to taste. Place tomato and corn mixture over breadcrumbs. Place remaining bacon over tomato and corn and top with remaining 1 cup of breadcrumbs. Bake at 350F for approximately 1 hour or until golden brown.

 

Tuna Noodle Casserole Recipe

 

Ingredients:

 

1 (12 ounce) bag wide egg noodles
1/4 cup onions (finely chopped)
3 tablespoons butter
1 cup heavy cream
1/4 cup milk
1 can tuna (drained and flaked)
1/2 cup peas
1/2 chicken stock cube

Directions:

 

Cook egg noodles with peas according to package instructions, drain and set aside.  Melt butter in heavy skillet and sauté onions over low heat until tender (approximately 2 minutes). Add 1/2 stock cube and tuna and stir well for about 2 minutes.  Add milk and cream and heat through. Do not let cream boil.  Gently stir until mixture is completely heated through.  Pour mixture over egg noodles, sprinkle with cheese and serve.

 

Extra Tip:

 

If you have a little extra time, place combined tuna mixture and egg noodles in baking pan. Sprinkle with cheese and cook at 350F for 10 minutes or until cheese is bubbly and golden. This easy tuna noodle casserole recipe also works great with macaroni pasta.

 

Ham and Potato Casserole Recipe

 

Ingredients:

 

1 pound fully cooked ham (diced)
5 cups thinly sliced potatoes
1 cup heavy cream
1/2 cup milk
1/4 cup finely chopped onion
2 tablespoons butter
1/2 cup grated cheddar cheese (optional)
Salt and pepper to taste

Directions:

 

In a large saucepan, melt butter over medium to low heat.  Add onions and ham and sauté for approximately 2 minutes. Gradually add milk and cream, stirring until thick and bubbly. Do not boil.  Add sliced potatoes to cream mixture.  Add salt and pepper to taste.  Cover and simmer for 8 minutes. Transfer mixture to a greased baking dish.  Top with cheddar cheese (if using). Bake, uncovered, at 350F for approximately 45 minutes, or until potatoes are tender.

 

Mexican Casserole Recipe

 

Ingredients:

 

2 cups cooked rice
2 tablespoons butter
1/2 green bell pepper (finely chopped)
1 small onion (finely chopped)
1 cup frozen or canned corn kernels
1 can Mexican style corn
1 can cream style corn
1 can diced tomatoes
1 cup cheddar cheese or Mexican style cheese (grated)

Directions:

 

Cook rice according to directions and set aside to cool.  Melt butter in heavy skillet. Add onion and green pepper. Sauté over low heat until tender (approximately 2 minutes). In a large bowl combine all ingredients reserving 1/2 cup cheese and mix well. Place mixture in casserole baking dish and top with remaining cheese. Bake at 350F for approximately 30 minutes or until cheese is bubbly and golden.

 

Easy Chicken Casserole Recipe

 

Ingredients:

 

4 skinless/boneless chicken breast halves
2 cups broccoli (fresh or frozen)
1 (10 ounce) can cream of mushroom soup
1/4 cup milk

Directions:

 

Place broccoli at bottom of lightly greased baking dish.  Place chicken breasts over broccoli. In a separate bowl combine soup and milk.  Pour soup mixture over chicken breasts. Bake at 350F uncovered for approximately 1 hour or until chicken is cooked through.

 

Chicken and Rice Casserole Recipe

 

Ingredients:

 

1 cup long-grain rice (uncooked)
1/2 cup celery (thinly sliced)
1 cup frozen peas
2 cups milk
2 tablespoons butter
2 cups cooked diced chicken
2 tablespoons flour
1/2 cup heavy cream
1 cup grated cheddar cheese (optional)
Salt and pepper to taste

Directions:

 

Cook rice with peas according to package instructions and set aside. Melt butter in a heavy skillet and add flour, milk, celery, salt and pepper.  Cook over low heat, stirring often, until sauce thickens.  Add chicken and cream and heat through. Do not boil.  Place rice and peas at bottom of a slightly greased baking dish.  Pour cream mixture over rice and sprinkle with cheese.  Bake at 350F approximately 20 minutes or until golden and heated through.
