Crispy Chicken Nuggets

Ingredients:
2 boneless/skinless halved chicken breasts approximately 6 bread sticks or crackers approximately 1 cup natural potato chips olive oil 2 eggs

Directions:

Cut chicken breasts into nugget-sized shapes and set aside.

Place the crackers or breadsticks and potato chips in a pastic bag.

Using a rolling pin or the back of your hand crush until mixture resembles fine crumbs.

Transfer the crumb mixture into a shallow bowl.

Crack the eggs into a seperate bowl and beat well.

Dip the chicken pieces into the egg and then into the crumb mixture.

Place on a lightly oiled baking tray.

Drizzle with a little olive oil and bake at 350F for approximately 20 minutes or until golden brown on outside and no longer pink inside.

Extra Tip:
Try adding a little dry herbs such as oregano or basil to the crumb mixture before coating nuggets. A little garlic powder works nicely too.
