Creamy Mashed Potato Recipe

This makes a delicious and creamy mashed potato recipe... but be warned it is high in fat and calories.

Ingredients:

Approximately 7 to 8 medium size russet potatoes (cut into quarters)
1/4 half and half (use milk for lighter potatoes)
1/4 cup butter
1/4 cup sour cream
1 tablespoon mayonnaise
Salt and pepper to taste

Directions:

  • Place potatoes and enough water to cover in large pot. Bring to a boil.

  • Reduce heat to medium and cook for approximately 15 to 20 minutes or until potatoes are tender.

  • Drain potatoes well and place back in pot.

  • Heat butter and half and half in a small saucepan.

  • Add half and half mixture, sour cream, mayonnaise, salt and pepper to potatoes and mix using wooden spoon.

  • Then, using an electric mixer, mix on high speed for approximately 2 minutes or until potatoes are creamy.
