Pecan Banana Bread

Ingredients:

2 cups all-purpose flour
1/2 cup butter
3/4 cup brown sugar
2 eggs (beaten)
1 teaspoon baking soda
1/4 teaspoon salt
3 very ripe bananas
1 cup semi-sweet chocolate chips

Directions:

  • Preheat oven to 325F.

  • Lightly grease a loaf shape baking dish.

  • In a large bowl combine flour, salt and baking soda.

  • In a seperate bowl cream together butter and brown sugar.

  • Stir in eggs and mashed bananas and mix well.

  • Stir banana/butter mixture into flour mixture and just blend.

  • Very gently fold in chocolate chips. Do not over mix.

  • Pour batter into loaf shaped baking dish.

  • Sprinkle top of bread with a few chocolate chips.

  • Bake at 325F for approximately 45 minutes or until center of cake is baked through.

  • Cool in baking dish for 10 minutes and transfer to wire rack to cool completely.
