California Chicken Sandwich

Ingredients:
2 boneless/skinless chicken breasts (cut in half lengthways) 1 thinly sliced avocado 1 cup grated carrot 1 tablespoon mayonnaise 4 buns

Directions:

Cut chicken breasts in half lengthways to make four thin chicken breasts.

Place under hot grill or grill on barbecue until cooked through and no longer pink (turn occasionally).

Mix grated carrot and mayonnaise in a small bowl.

Spread each bun with mayonnaise and carrot mixture.

Place sliced avocado on top of mixture and finally top with one chicken breast.
