Barley Beef Soup Recipe

Ingredients:
1 lb stew meat (cut into chunks) 2 tablespoons olive oil 3 cloves garlic (crushed) 1 onion (finely chopped) 2 cups carrots (roughly chopped) 2 stalks celery (finely chopped) 2 zucchini (diced) 3/4 cup uncooked barley 1 bay leaf Dash sugar Salt and pepper to taste 2 cans diced tomatoes

Directions:

Place olive oil in large pot and add stew meat, onions and garlic.

Sautee on low until brown (about 3 to 4 minutes).

Add barley, carrots, zucchini, celery, bay leaf, and enough water to cover.

Bring to a boil and simmer until beef and barley are tender (about 20 minutes).

Add sugar, salt, pepper, and tomatoes.

Simmer for 15 minutes and serve.
