Apple Yogurt Pancakes

Ingredients:
2 eggs 1 2/3 cups milk 1 (8 ounce) container plain yogurt 1/4 cup applesauce 2 1/2 cups all-purpose flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1 1/2 teaspoons ground cinnamon 1 apple (peeled, cored and finely grated)

Directions:

In a large bowl, mix together the eggs, milk, yogurt and applesauce until well blended.

Combine the flour, baking powder, baking soda, salt and cinnamon in another bowl. T

Stir into the milk mixture until smooth.

Heat a lightly oiled griddle or frying pan over medium high heat.

Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each cake.

Cook until bubbles form in the cakes and the bottoms are golden brown.

Flip and cook the other side.

Serve warm with syrup or jam.
